There’s no question that summer and ice cream make a splendid combo. When cherries have ripened during the warm months, it’s the perfect time to make a flavorful and sweet cherry ice cream. Today I’m offering you a foolproof recipe that requires only 3 ingredients and makes the most delicious vegan cherry soft serve ice cream. And the best part? You don’t need an ice cream machine to make it!
It feels like nowadays you need an extra appliance for everything. Pancake pan to bake pancakes, waffle pan for waffles, donut pan for donuts and ice cream machine for making an ice cream. And let’s not forget about the blender, food processor, coffee machine, and toaster. The result? Stuffed kitchen and lots of wasted money. 🙁
Luckily, there are more and more new inventions to get rid of the kitchen clutter. I’m forever grateful to that special person who invented silicon. Now I need a tiny space for my donut and waffle silicon mould.
But what about ice cream? If you’re like me, you don’t want to waste your money for a store-bought ice cream filled with ingredients that you can’t even pronounce. But do you really need to buy that big, bulky ice cream machine to make a delicious and healthy ice cream at home?
No, you don’t have to! You can make your own ice cream cheaply and quickly without using an ice cream machine. How? With frozen bananas, of course! When you freeze ripe bananas and blend them up, you get a smooth ice cream-like texture. This opens a whole new world for creating your own wholesome ice cream with flavors you like the best.
A while ago, I made an ice cream with mint and chocolate. But last week, when I saw the ripe and shiny cherries at the farmers’ market, I knew that cherry soft serve ice cream is up to the next.
Because of their skin, cherries are high in fiber and their deep red color gives a hint of a high antioxidant content. Cherries are also high in melatonin which supports healthy sleep. And for anyone who’s trying to get rid of some extra kilos, cherries are great for weight loss as well.
If you’re not a chocolate lover, you can easily skip the cacao nibs and make a bolder version of this ice cream with bananas and cherries only. Your choice. 🙂

Vegan Cherry Chocolate Soft Serve Ice Cream
Makes 2 servings
- 3 very ripe bananas (black dots on the peel indicate the perfect ripeness), chopped and frozen overnight
- 1 cup of fresh cherries, pitted and halved + a few for topping
- 2 tbsp cacao nibs or dark chocolate chunks
- Put cherries and frozen bananas into a high-speed blender or a food processor (cherries must be at the bottom as they’re easier to blend). Blend until smooth.
- Stir in cacao nibs, top the ice cream with extra cherries and serve immediately.
